Consistent water — dry stress makes woody bulbs. Harvest when tennis-ball sized; bigger gets tough.
Harvest
Cut just below the bulb when 2–3" across. Skin peels easily; eat raw or cook like turnip.
Best fresh. Can pickle. Freezes poorly.
