Made strawberry jam this weekend from the everbearing patch — the June-bearers wound down but the everbearers are hitting their first big flush. Six half-pints, low-sugar pectin, water-bath processed 10 minutes.
The canner comes out of the cellar mid-June and doesn't go back until October. Peaches, blueberry jam, then the tomato onslaught, then apple butter. Every jar labeled with the date and the crop. My grandmother did the same.
